1/2 cup grated Parmesan cheese
Olive oil spray
2 large eggs
1 cup almond flour
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
Olive oil spray
Directions
Cut each mozzarella stick in half to make 16 pieces.
In a shallow bowl, beat the eggs until well combined.
In another shallow bowl, mix together the almond flour, garlic powder, Italian seasoning, salt, pepper, and Parmesan cheese.
Dip each mozzarella piece into the egg mixture, then coat it in the almond flour mixture, pressing gently to adhere.
Place the coated mozzarella sticks on a baking sheet lined with parchment paper.
Freeze the mozzarella sticks for at least 1 hour to help them hold their shape during cooking.
Preheat your air fryer to 400°F (200°C).
Lightly spray the frozen mozzarella sticks with olive oil spray.
Place the mozzarella sticks in the air fryer basket in a single layer, making sure they are not touching.
Air fry for 6-8 minutes, or until golden brown and crispy. Keep an eye on them to prevent overcooking.

Variations & Tips
For a spicier kick, add a pinch of cayenne pepper to the almond flour mixture. If you prefer a different cheese, try using cheddar or pepper jack sticks instead of mozzarella. For a gluten-free version, ensure that all your ingredients are certified gluten-free. If you don't have an air fryer, you can bake these in the oven at 400°F (200°C) for about 10-12 minutes, flipping halfway through.
