Baked Jalapeño Popper Potato Cakes are a delightful fusion of two comfort food classics. Growing up in the Midwest, I was always surrounded by hearty potato dishes, and jalapeño poppers were a staple at every family gathering. This recipe combines the creamy, cheesy goodness of jalapeño poppers with the crispy exterior of potato cakes, making it a perfect appetizer or side dish. It's a great way to spice up your weeknight dinners or impress guests at a weekend get-together.
These potato cakes are versatile and pair wonderfully with a fresh green salad or a side of roasted vegetables. If you're serving them as an appetizer, consider offering a selection of dipping sauces like ranch, sour cream, or even a tangy salsa. For a heartier meal, they go well alongside grilled chicken or a juicy steak.

Variations & Tips
For a spicier kick, leave the seeds in the jalapeños or add a pinch of cayenne pepper to the mixture. You can also substitute the cheddar cheese with pepper jack for an extra layer of flavor. If you're looking to make this dish gluten-free, use gluten-free breadcrumbs. For a vegetarian twist, add some finely chopped bell peppers or corn to the mixture for added texture and sweetness.
