Mediterranean Ground Beef Stir Fry

Ingredients
1 pound ground beef
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, sliced
1 zucchini, sliced
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon dried oregano
Salt and pepper to taste
1/4 cup chopped fresh parsley
Juice of 1 lemon
Directions
Heat olive oil in a large skillet over medium heat.
Add the chopped onion and minced garlic, and sauté until the onion is translucent.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
Stir in the bell pepper and zucchini, and cook for about 5 minutes until the vegetables are tender.
Sprinkle in the cumin, paprika, oregano, salt, and pepper, and stir well to combine.
Cook for another 2-3 minutes to let the flavors meld together.
Remove from heat and stir in the fresh parsley and lemon juice.
