Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 package (3 oz) lemon Jello
1 cup boiling water
1 package (8 oz) cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 can (12 oz) evaporated milk, chilled
Directions
Combine the graham cracker crumbs and 1/4 cup of sugar in a bowl. Stir in the melted butter until well mixed.
Press the mixture into the bottom of a 9x13 inch pan to form the crust. Reserve a small amount of crumbs for topping.
Dissolve the lemon Jello in 1 cup of boiling water. Let it cool to room temperature.
In a large bowl, beat the cream cheese, 1 cup of sugar, and vanilla extract until smooth and creamy.
Gradually add the cooled Jello to the cream cheese mixture, mixing well.
In a separate bowl, whip the chilled evaporated milk until it forms stiff peaks.
Gently fold the whipped evaporated milk into the cream cheese mixture until fully combined.
Pour the filling over the prepared crust in the pan.
Sprinkle the reserved graham cracker crumbs on top.
Refrigerate for at least 4 hours or until set. Serve chilled.
