Herbed Alfredo Tortellini with Spinach is one of those dishes that feels like a warm hug after a long day. It's inspired by the comforting flavors of Italian cuisine, combining the creamy richness of Alfredo sauce with the cheesy goodness of tortellini. This recipe is perfect for busy weeknights when you want something delicious but don't have hours to spend in the kitchen. Plus, it's made in a slow cooker, so you can set it and forget it while you tackle your to-do list.
This Herbed Alfredo Tortellini with Spinach pairs beautifully with a simple side salad of mixed greens and a light vinaigrette. You might also enjoy it with a slice of crusty garlic bread to soak up the creamy sauce. For a touch of freshness, consider serving it with a side of roasted vegetables like asparagus or cherry tomatoes.

Variations & Tips
For a protein boost, add cooked chicken or Italian sausage to the tortellini mixture before cooking. You can also experiment with different cheeses, such as Parmesan or Asiago, for a more complex flavor. If you prefer a bit of heat, sprinkle in some red pepper flakes. For a vegetarian version, ensure your Alfredo sauce is meat-free.
