2 cups cooked white rice, preferably day-old
2 tablespoons vegetable oil
1/2 pound smoked sausage, sliced
1 small onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 cloves garlic, minced
2 eggs, beaten
2 tablespoons soy sauce
1 tablespoon hot sauce (optional)
Salt and pepper to taste
2 green onions, sliced
Directions
Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
Add the smoked sausage slices and cook until browned, about 5 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining tablespoon of oil. Add the onion, red bell pepper, and green bell pepper. Sauté until the vegetables are tender, about 5 minutes.
Add the garlic and cook for an additional minute until fragrant.
Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
Add the cooked rice to the skillet, mixing it with the vegetables and eggs.
Return the smoked sausage to the skillet and stir to combine.
