Herb-Crusted Baked Breaded Pork Chops with Lemon Zest
Servings: 4 servings
Ingredients
4 boneless pork chops
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
Zest of 1 lemon
2 tablespoons olive oil
Directions
Preheat your oven to 400°F (200°C).
Set up a three-step coating station: Place the flour in one shallow dish, the beaten eggs in another, and the breadcrumb mixture in a third.
In the breadcrumb dish, combine breadcrumbs, Parmesan cheese, thyme, rosemary, garlic powder, onion powder, paprika, salt, pepper, and lemon zest.
Coat each pork chop in flour, shaking off excess, then dip into the beaten eggs, and finally press into the breadcrumb mixture to coat evenly.
Place the coated pork chops on a baking sheet lined with parchment paper.
Drizzle the pork chops with olive oil to help them crisp up in the oven.
Bake in the preheated oven for 25-30 minutes or until the pork chops are golden brown and cooked through, with an internal temperature of 145°F (63°C).
Remove from the oven and let the pork chops rest for a few minutes before serving.
Variations & Tips

For a gluten-free version, substitute the all-purpose flour and breadcrumbs with gluten-free alternatives. If you have picky eaters, you can omit the lemon zest for a more traditional flavor. For an extra kick, add a pinch of cayenne pepper to the breadcrumb mixture. You can also experiment with different herbs, such as oregano or basil, to suit your family's taste preferences.
