These low carb mini ham and cheese quiches are a lifesaver for busy mornings or when you need a quick snack. I first stumbled upon the idea when I was trying to cut down on carbs but still wanted something filling and delicious. These little quiches are perfect because they're easy to make, can be prepped ahead of time, and are a hit with both kids and adults. Plus, they're a great way to use up any leftover ham or cheese you might have in the fridge.
These mini quiches are quite versatile and pair wonderfully with a fresh green salad or some steamed asparagus for a light lunch. If you're serving them for breakfast, consider adding a side of fresh fruit or a small bowl of yogurt. For a more substantial meal, you can pair them with a hearty vegetable soup or a roasted vegetable medley.

Variations & Tips
For a vegetarian version, you can replace the ham with sautéed mushrooms or bell peppers. If you prefer a different cheese, try swapping the cheddar for Swiss or mozzarella. To add a bit of spice, consider adding a pinch of red pepper flakes or a dash of hot sauce to the egg mixture. These quiches can also be made ahead of time and stored in the fridge for up to 3 days or frozen for up to a month. Just reheat them in the oven or microwave before serving.
