2 1/4 teaspoons active dry yeast
3 tablespoons sugar
3 1/2 cups all-purpose flour
1 teaspoon salt
4 large eggs
1/2 cup unsalted butter, softened
1 cup shredded cheese (cheddar or your choice)
1 egg (for egg wash)
1 tablespoon water

Directions
In a small bowl, combine warm milk, yeast, and sugar. Let it sit for about 5 minutes until frothy.
In a large mixing bowl, combine flour and salt. Add the yeast mixture and mix until just combined.
Add eggs one at a time, mixing well after each addition.
Gradually add the softened butter, mixing until the dough is smooth and elastic.
Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
Preheat your oven to 375°F (190°C).
Punch down the dough and divide it into 12 equal pieces.
Flatten each piece of dough and place a tablespoon of shredded cheese in the center. Fold the edges over the cheese and pinch to seal.
Place each bun seam-side down in a round baking cup on a non-stick baking tray.
