Ingredients
12 oz (340g) penne pasta
1 lb (450g) Italian sausage, sliced
2 cups fresh spinach, roughly chopped
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 small onion, diced
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Directions
Preheat your oven to 375°F (190°C).
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic and sliced sausage to the skillet. Cook until the sausage is browned and cooked through.
Stir in the chopped spinach and cook until wilted, about 2 minutes.
Reduce the heat to low and pour in the heavy cream. Stir in the oregano, red pepper flakes, salt, and pepper.
Add the cooked pasta to the skillet and toss everything together until well combined.
