Grandma would prepare this each Sunday morning before we went to church. It's still my favorite!

This creamy garlic chicken pasta is a lifesaver for those busy weeknights when you crave something comforting yet quick to prepare. Inspired by my love for Italian cuisine and the need for a hearty meal after a long day, this dish combines tender chicken with a luscious garlic sauce that clings beautifully to the pasta. It's a dish that feels like a warm hug, perfect for family dinners or even a solo treat.
This creamy garlic chicken pasta pairs wonderfully with a simple green salad dressed in a light vinaigrette to balance the richness of the sauce. You might also enjoy it with a side of garlic bread or a slice of crusty baguette to soak up every last bit of the delicious sauce. For a touch of freshness, consider serving it with steamed or roasted vegetables like asparagus or broccoli.

Creamy Garlic Chicken Pasta
Servings: 4
Ingredients
8 oz fettuccine or linguine
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper to taste
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley
Directions
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
Reduce the heat to low and stir in the Parmesan cheese until the sauce is smooth and creamy.
Add the cooked pasta and chicken back to the skillet, tossing to coat everything in the sauce.

Variations & Tips
For a lighter version, you can substitute half-and-half for the heavy cream. If you're a fan of spice, add a pinch of red pepper flakes to the garlic for a little kick. You can also switch up the protein by using shrimp or even mushrooms for a vegetarian option. For added flavor, consider incorporating a splash of white wine to the sauce before adding the cream.
