This oven-baked chicken nacho casserole is a delightful twist on the classic nachos we all love. Growing up in the Midwest, I remember my mom making hearty casseroles that could feed a crowd, and this dish brings back those comforting memories with a Tex-Mex flair. It's perfect for a weeknight dinner or a casual get-together with friends. The combination of shredded chicken, melted cheese, and crispy tortilla chips is irresistible, and it's a great way to use up leftover chicken. Plus, it's all baked together in one dish, making cleanup a breeze.
This casserole pairs wonderfully with a simple side salad or some steamed vegetables to balance out the richness of the cheese and chips. You could also serve it with a side of guacamole or sour cream for dipping. If you're hosting a gathering, consider adding a pitcher of margaritas or some iced tea to complete the meal.

Variations & Tips
For a spicier version, add some sliced jalapeños on top before baking. You can also substitute the cheddar cheese with a Mexican cheese blend for a different flavor. If you're looking to make it vegetarian, swap the chicken for black beans or a mix of beans and corn. For a creamier texture, mix in a can of cream of chicken soup with the chicken before layering.
