Oven-Baked Spinach and Bacon Pasta Bake
Servings: 6
Ingredients
12 oz (340g) penne pasta
6 slices of bacon, chopped
2 cups fresh spinach, roughly chopped
1 cup heavy cream
1 cup milk
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 tablespoon olive oil
2 tablespoons chopped fresh parsley or scallions for garnish
Directions
Preheat your oven to 375°F (190°C).
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
Pour in the heavy cream and milk, stirring to combine. Bring the mixture to a gentle simmer.
Stir in the mozzarella and Parmesan cheese, allowing them to melt and create a creamy sauce.
Add the chopped spinach to the sauce, stirring until wilted.
Season the sauce with salt, black pepper, and red pepper flakes if using.
Combine the cooked pasta with the sauce, ensuring the pasta is well coated.
Transfer the pasta mixture to a greased 9x13 inch baking dish.
Sprinkle the cooked bacon evenly over the top.
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
Remove from the oven and let it cool slightly before serving.

Variations & Tips
For a vegetarian version, omit the bacon and add sautéed mushrooms or sun-dried tomatoes for extra flavor. If you prefer a lighter version, substitute the heavy cream with half-and-half or a plant-based milk alternative. For added protein, consider mixing in cooked chicken or shrimp before baking. To enhance the dish's flavor, try using a mix of cheeses such as cheddar or Gruyère along with mozzarella.
