Slow Cooker Glazed Teriyaki Meatballs
Servings: 4-6 servings
Ingredients
1 pound ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 egg
2 cloves garlic, minced
1/4 cup soy sauce
1/4 cup brown sugar
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon cornstarch
1/4 cup water
1 tablespoon grated ginger
2 green onions, sliced (for garnish)
Sesame seeds (for garnish)
Directions
In a large bowl, combine ground beef, breadcrumbs, milk, egg, and minced garlic. Mix until well combined.
Form the mixture into small meatballs, about 1 inch in diameter.
In a separate bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, grated ginger, cornstarch, and water to make the teriyaki glaze.
Place the meatballs in the slow cooker and pour the teriyaki glaze over them.
Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the meatballs are cooked through and the glaze is thickened.
Once cooked, gently stir the meatballs to ensure they are evenly coated with the glaze.
Transfer the meatballs to a serving dish and garnish with sliced green onions and sesame seeds before serving.

Variations & Tips
For a healthier option, you can use ground turkey or chicken instead of beef. If you have picky eaters, consider adding some finely chopped vegetables like carrots or bell peppers to the meatball mixture for added nutrition. For a spicier kick, add a dash of sriracha or red pepper flakes to the teriyaki glaze. If you prefer a gluten-free version, use gluten-free breadcrumbs and tamari instead of soy sauce.
