Ingredients
2 1/4 teaspoons active dry yeast
1 1/2 cups warm water (110°F/45°C)
1/2 cup granulated sugar
1 teaspoon salt
2 large eggs
1 cup evaporated milk
7 cups all-purpose flour
1/4 cup vegetable shortening
Vegetable oil for frying
Powdered sugar for dusting
Directions
In a large bowl, dissolve yeast in warm water. Let it stand for about 5 minutes until foamy.
Add sugar, salt, eggs, and evaporated milk to the yeast mixture. Mix well.
Stir in 4 cups of the flour and beat until smooth.
Add the shortening and continue to mix while adding the remaining flour, 1 cup at a time, until a soft dough forms.
Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight.
On a floured surface, roll out the dough to 1/4-inch thickness. Cut into 2-inch squares.
Heat vegetable oil in a deep fryer or large pot to 360°F (182°C).
Fry the beignets in batches, turning them once, until golden brown on both sides, about 2-3 minutes per side.
Remove with a slotted spoon and drain on paper towels.
