Cooktop Cove: Upgrade your brunch with an easy, fast and super tasty baked potato bowl

Eggs are the ultimate brunch food, but having them sunny side up or scrambled for days on end can get repetitive quickly. Luckily, we have an inventive way to spice things up.
Breakfast is the most important meal of the day, so you want something hearty that'll stick to your ribs and keep you full and focused as you go about your morning. While baked potatoes may not be the first food that comes to mind when you brainstorm breakfast ideas, the recipe below may change your mind.
To make these mouthwatering morning baked potatoes, you'll need:
3 large baked potatoes
butter (about 1/2 tablespoon per potato)
3 eggs
3 strips of bacon, cooked and crumbled
3 tablespoons of shredded cheddar cheese (or any cheese of your choice)
1 tablespoon of chopped fresh parsley
salt and pepper to taste
First, bake your potatoes to your desired level of done-ness and slice about 1/3 off lengthwise.
Next, hollow out the larger side with a spoon. Take care to leave enough potato around the edges so that it can stand on its own and make sure it doesn't have any holes in it.
Drop the butter into each hollowed-out bowl, then crack an egg into each one.
Then, sprinkle a generous amount of cheese into each potato, along with bacon, parsley or whatever other toppings you'd like.
Add salt and pepper to taste, then bake the potatoes for 20 to 25 minutes (or until the eggs are set) at 350 degrees.
Once they're out of the oven, you'll be met with the irresistible aroma of bacon and cheese. As difficult as it may be, wait for them to cool down a little bit before digging in. Enjoy!
