Cooktop Cove: Lick the plate clean with an inspired pork chop recipe that's sure to please

Thai-style pork with peanut sauce can be addictive. The sweet flavor of peanuts combines beautifully with just a kick of spice. But if you aren't used to cooking with peanuts, you might not know where to begin enjoying this delicious meal at home.
This great Thai-inspired pork chop recipe is just what you need to get started. It's easy to make and uses ingredients that you can find at almost any grocery store in case you don't have an Asian market near by.
Ingredients:4 boneless pork loin chops (8 oz each)
2 red bell peppers, seeded and sliced
1/4 cup teriyaki sauce
1/4 cup creamy peanut butter
2 tablespoons rice vinegar
1 teaspoon crushed red pepper flakes for mild (add more as your taste prefers)
2 cloves garlic, minced
1/4 cup green onion, chopped
1/4 cup roasted peanuts, chopped
1. Lay pork chops in a slow cooker that has been coated with cooking spray or greased with butter.
2. Mix together teriyaki, vinegar, pepper flakes and garlic, then pour over the chops
3. Cover and cook on low for 4 hours. Add in the sliced bell peppers. Add 1/4 cup of water if needed.
4. Cover and continue to cook for 2-3 hours more, or until the pork chops are tender.
5. Remove pork chops and whisk in the peanut butter until well blended. Add chops back to the slow cooker and let stew for another 10 minutes.
6. Serve with sauce on the side or poured on top. Garnish with chopped green onion and toasted peanuts.
