Vegetarian cheesy quinoa spinach breakfast cups
Preparation Time: 5 minutes
Total Time: 30 minutes
Serves: 12
Ingredients
1 cup cooked quinoa
3 large eggs
1 cup shredded mozzarella
1 cup fresh spinach
Salt and pepper
1/4 tsp garlic powder
1/4 tsp Italian seasoning
Directions
1. Preheat oven to 350° and while you're waiting, chop fresh spinach and put to the side. Crack three eggs into a large mixing bowl and whisk vigorously.
2. Add cooked quinoa to the mixing bowl, along with mozzarella, chopped spinach, garlic powder, salt, pepper, and Italian seasoning.
4. Stir ingredients together with a large spatula until mixed thoroughly.
5. Spray a muffin pan with cooking spray and spoon in mixture. Be careful to wipe the edges of the muffin pan if you spill any mixture on it, so you don't end up with burned pieces.
6. Bake 25-30 minutes or so, until the eggs are set. Let cool, and serve.
Pro tip: To cook quinoa on the stovetop, first rinse thoroughly until the water runs clear. Put into a medium pot and add salt and 2 cups of water. Bring to a boil. Reduce heat and simmer about 20 minutes. Remove from heat and let cool.
