Cooktop Cove: Put Velveeta in a slow cooker for a Mexican meal that'll rock your tastebuds

Menudo is a Mexican classic that's perfect for a home-cooked feeling on quiet days. If you're looking for a way to shake up this classic meal, check out our special version that uses Velveeta cheese to transform normal Menudo into a creamy, cheesy soup.
The type of meat you use is up to you..we recommend beef, but shredded chicken or tripe work well too. Use what you prefer!
Cheesy Menudo

2 16-oz. cans yellow hominy, drain liquid
4-oz. chopped green chilies
1/2 lb. Velveeta Light cheese, diced
1 teaspoon garlic salt
1/2 teaspoon black pepper
1 tablespoon fresh cilantro, chopped
1½ pounds diced beef chuck
Add all ingredients into a 6 quart slow cooker
Cook on low 4 hours.
Serve with warm tortillas.
