Cooktop Cove: How to make low-carb garlic Parmesan salmon

I cook a lot of salmon because it’s such a nutritious choice for low-carb meals. It’s high in protein and full of healthy fats. Plus, it’s delicious and very versatile. The recipe below is fast and easy to make and produces a dish that’s packed with flavor. A quick mixture of ingredients slathered over the fish turns into a creamy and flavorful sauce as it cooks.
I like to pair this salmon dish with roasted broccoli. Not only do the flavors go well together, but you can roast the broccoli on the same pan with the salmon. Add cauliflower rice or salad greens, and this is a dish that won’t leave you missing carbs one bit.
Low-carb garlic parmesan salmon

4 (6-ounce) salmon fillets
2 tablespoons olive oil
2 garlic cloves, minced
1/2 cup freshly grated Parmesan cheese
1/2 cup mayonnaise
2 tablespoons minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper or aluminum foil.
Heat the oil in a skillet over medium heat. Add the garlic and sauté for 1 minute.
Add the cheese and mayonnaise and stir to combine well. Remove from the heat and stir in the parsley.
Arrange the salmon fillets on the baking sheet and sprinkle with salt and pepper.
Spread the cheese mixture over the fillets, dividing equally.
Bake, uncovered, in the oven for 10 to 15 minutes, until the fish is cooked through and flakes easily.
