Cooktop Cove: These pizza bites vanished so fast! Nobody could believe they were just 3 ingredients

Let's be real. This recipe won't provide you with a full meal (unless you eat a lot of them). On the other hand, they're very delicious snacks that will satisfy any pizza craving without wrecking your waistline. Also, they only take three ingredients to make and about five minutes of your time. If you include prep time and preheating the broiler, it's still only 10 minutes.
Although I love pepperoni and I love pizza sauce even more (I actually order pizza with extra sauce), it's the cheese that really gets me with this recipe. It's no so thick that you feel as though you have a brick of cheese in your mouth, but it's just thick enough to be squeaky and melty when you chew it. Remember to take the pizza bites out when the cheese about halfway melted – about 2 minutes into the recipe – so it will still be pliable enough to top with pepperoni and have it stick.
Low-Carb Pepperoni Pizza Bites

2 cups mozzarella cheese, shredded
1/2 cup pizza sauce
12 to 16 pepperoni slices
Preheat broiler and line baking sheet with parchment paper.
While the broiler is preheating, place mounds of about 1/4 cup of cheese on the baking sheet about two inches apart.
Place the baking sheet under the broiler and broil for about 2 minutes, until most of the cheese has melted but there is still some formed in the center.
Remove the baking sheet and top each circle of cheese with about a tablespoon of pizza sauce and 1 or 2 slices of pepperoni.
Place back under the broiler and broil for another 1 to 2 minutes, until the cheese has completely melted and starts to brown along the edges. Keep an eye on the cheese because it will burn quickly.
Remove the baking sheet from the oven and allow the pizza bites to cool and harden for a couple of minutes.
