Cooktop Cove: How to make garlic parmesan broccoli

Broccoli is one of those vegetables that lots of people think they don't like. This unfortunate reputation comes, not from broccoli itself, but from years of preparing it in less-than-palatable ways. But the recipe below helps make broccoli hatred disappear.
The secret to making broccoli super delicious is bringing out its natural sweetness. This is a breeze when you roast it in a hot oven. The edges of the broccoli florets caramelize and become richly flavored. The Parmesan and garlic add a welcome hit of umami (savory taste), making this the ideal side dish for any meal.
Garlic-Parmesan Broccoli

2 heads broccoli, cut into florets
2 tablespoons olive oil
4 cloves garlic, minced
1/3 cup Parmesan cheese
1/4 teaspoon freshly ground black pepper
1/8 teaspoon red pepper flakes (optional)
Zest of 1 lemon
Preheat the oven to 400 degrees F.
Toss the broccoli florets with the olive oil and roast for 20 to 25 minutes, until tender and caramelized around the edges.
Transfer broccoli from the hot baking sheet to a mixing bowl, add garlic, and toss well to coat.
Transfer back to baking sheet and bake 1 to 2 more minutes until golden.
Remove the broccoli and garlic from baking sheet and place in a bowl.
Add the Parmesan cheese, black pepper, red pepper flakes and lemon zest, and toss well to combine. Serve hot.
