Chicken and spinach lasagna casserole
Lasagna is always a family favorite, but that doesn't mean it needs to be cooked the exact same way every time. As in the recipe that follows, you get to swap out the beef for chicken or exchange the tomato sauce for white sauce and add in all kinds of vegetables. Spinach works particularly well. As with all lasagnas, the entire thing gets smothered in cheese for a rich and decadent dish that's not like your mother's lasagna!
Spinach and tilapia casserole
Tilapia is one of the few types of freshwater fish that does very well in a cream sauce. Usually fish and lots of heavy dairy ingredients just don't go well together. However, when you use the recipe that follows you'll not only have a delicious dish that everyone wants to dive into, but you can also hide some healthy leafy green vegetables in there and no one will mind.
Bacon, chicken, spinach and feta casserole
The recipe that follows is everything you want it to be. It's hearty and filling yet light enough that it won't weigh you down. It's also chock-full of tons of tasty ingredients including chicken, bacon, spinach and, perhaps best of all, feta cheese. Orzo pasta gives it enough oomph to be a complete meal in itself, and it takes just minutes to bring it all together.
Italian sausage and spinach pasta casserole
Rigatoni pasta, Italian sausage and spinach are all cooked together in a zesty tomato sauce in this delicious casserole. When you need to switch up your regular weekly night pasta meal, this is a great way to do it! Use hot Italian sausage, as in the recipe that follows, or tone down the heat by using mild sausage. You can even use turkey sausage if you'd like. With this recipe, the choice is all yours!
Spinach artichoke quinoa casserole
Quinoa is one of those grains that can really trip up people. This is mostly because although it looks and acts like a grain, quinoa is actually a seed, which makes it one of those nutritious proteins that is low in carbs but high in healthy things such as fiber. Plus, it's crazy delicious -- especially when it's combined with other healthy ingredients such as artichokes and spinach, as in the recipe that follows.
Spinach and tuna casserole
Spinach may not be the first ingredient you think of when you think of tuna casserole. But as the recipe below shows, maybe it should be. Think of this as a tuna casserole that gets a seriously elegant upgrade. There are no peas or mushroom soup -- just good, fresh ingredients that take that old tuna casserole your mom used to make and turn it into something truly special.
Spanakopita cottage cheese and egg casserole
Spanakopita is such a great dish. But let's face it, it's a pie -- and as a pie, it's not always great for the waistline. But now you can have your pie and eat it too. As the recipe below shows, you can combine all the ingredients (except for that calorie-laden pastry) and still enjoy all the great flavors of spanakopita, but without any of those nasty carbs dragging you down.
