For the waffles:
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon kosher salt
2 large eggs, lightly beaten
1-3/4 cups milk
1/4 cup (half stick) unsalted butter, melted
1 cup diced ham
1 cup shredded sharp cheddar cheese
For the dipping sauce:
1/4 cup stoneground mustard
2 tablespoons honey
1 tablespoon hot sauce
Preheat the waffle iron.
In a large mixing bowl, combine the flour, baking powder and salt and whisk to mix well.
Add the eggs, milk and butter and mix just to combine.
Gently fold in the diced ham and shredded cheese.
Make the dipping sauce by combining the mustard, honey and hot sauce in a small bowl.
Cook the waffles according to the waffle iron manufacturer's instructions.
Serve hot, with the spicy mustard sauce alongside.
