"Despicable Me" Minion cupcakes

Minions are all the rage these days. If your kids' obsession with them hasn't taken over your daily life by now, it probably will sooner or later. And they're not just popular with children, either – everyone loves Minions. The box office hits and endless streams of merchandise speak for themselves. So if you're looking for a treat that'll dazzle everyone at a birthday party and fill up some bellies, look no further: Rosanna Pansino's Minion cupcakes are the way to go.
Here's the list of ingredients you'll need for these adorable delicacies:

1 1/2 cup mashed bananas (approximately 4 whole)
1 1/2 cup flour
3/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp vanilla extract
2 eggs
1 stick melted butter
Twinkies (or Milanos cookies)
Sprinkles (dark brown or black)
White Smarties candy
Black frosting
Vanilla buttercream frosting
Blue food coloring
Start by mixing together all your dry ingredients: Flour, sugar, baking powder, baking soda, and salt. Whisk them together.
In a separate bowl, mash your bananas into mush. Pansino uses a potato masher for this task. Add vanilla extract, eggs, and butter. Mix well.
Combine both mixtures in the larger bowl, and mix them together with a beater.
Scoop the banana cupcake batter into cupcake trays, 2 tablespoons per cupcake. Preheat the oven to 350 degrees, then bake for 18 minutes. The time needed for the cupcakes to be ready may vary.
Cut Twinkies in half to make the Minions' bodies, and decorate them with white Smarties and frosting. Use frosting to glue the Smarties to the Twinkies for white eyeballs, and use black frosting for pupils, glasses and mouths. Stick black or dark brown sprinkles into the top of the "heads" to look like hair.
Once the cupcakes are finished, let them cool, then use a knife to cut across the top and create a flat surface for the minions to sit on. Then with a bag filled with vanilla buttercream frosting (colored blue to look like the Minions' pants), cover the surface in a circular shape. Your Minions are ready to be planted on your cupcakes!
