4 chicken breast sliced into strips
1 onion thinly sliced
6 garlic cloves minced
1 cup mushroom sliced
2 cups bell pepper sliced
1 cup zucchini sliced
1 tablespoon cumin
2 teaspoon coriander
1 lime juiced
1/4 cilantro coarsely chopped
1 tablespoon salt
pepper to taste
In a 6-quart slow cooker add in all ingredients except cilantro
Mix well and cook on high for 2 hours
Remove lid, mix well and continue to cook for another 30 minutes
Add in cilantro, stir and serve with tortillas or rice for a complete meal
