How to make chicken Parmesan casserole (video)

It's as easy as 1-2-3. Mix, build, and bake. The Italian breadcrumbs add a great crunchy texture to the dish at the end. This dish is perfect for a busy mom (or dad) who just needs to get a hearty dinner on the table.

Chicken Parmesan casserole

2 tablespoons extra virgin olive oil
2 pounds boneless, skinless chicken, cut into 1-inch cubes
1 teaspoon salt
1 teaspoon black pepper
4 cloves garlic, minced
1 teaspoon red pepper flakes
3 tablespoons tomato paste
1½ cups marinara sauce, divided
2 cups shredded mozzarella cheese, divided
1 cup shredded Parmesan cheese, divided
½ cup basil, cut into ribbons
1 cup Italian breadcrumbs
Preheat oven to 375 degrees Fahrenheit.
Grease a 3-quart casserole dish with olive oil.
In a mixing bowl, combine chicken with salt, pepper, garlic, red pepper flakes, tomato paste, 1 cup marinara sauce, 1 cup mozzarella cheese, ½ cup Parmesan cheese and basil. Pour into casserole dish.
Pour remainder of marinara sauce over chicken.
Sprinkle remainder of mozzarella and Parmesan cheeses over the chicken.
Cover with foil and bake for 45 minutes, or until internal temperature reaches 165 degrees F.
Remove foil and top with Italian breadcrumbs. Return to oven, uncovered, and bake for 15 minutes, until cheese and breadcrumbs turn golden brown.
Tip: If you want breadcrumbs to soak up more of the marinara sauce, add them at the beginning before baking. But if you want to keep that crumbly texture, add the breadcrumbs at the end.
