Low Carb Slow Cooker Salsa Chicken

4 chicken breast boneless skinless, slice into thin strips
2.5 cups red salsa (store-bought or use our homemade recipe)
1/3 cup shredded mozzarella
3 tablespoon fresh cilantro chopped
1 teaspoon lime juice
1 tablespoon salt
pepper to taste
1. In a 6-quart slow cooker, combine chicken, salsa, lime juice, salt and pepper. Mix well being sure that all pieces of chicken are coated in salsa. Cook on low for 2 hours.
2. Remove lid and stir thoroughly then top with mozzarella. Cook for another hour on high with NO lid.
3. Garnish with cilantro and serve.
