How to make salsa chicken with lime and melted mozzarella in a slow cooker (video)

Who says low carb can't taste good? In the recipe below, you can dress up chicken to be tasty and low-carb. The best part about this dish isn't that it's healthy, but that it's also easy to adapt. 
You can use your favorite store bought salsa (we recommend something chunkier rather than one with a lot of liquid), or use the bonus salsa recipe below.

Salsa Chicken

4 chicken breast boneless skinless, slice into thin strips
2.5 cups red salsa (store bought or use *homemade recipe below)
1/3 cup shredded mozzarella
3 tablespoon fresh cilantro chopped
1 teaspoon lime juice
1 tablespoon salt
pepper to taste
In a 6-quart slow cooker, combine chicken, salsa, lime juice, salt and pepper. Mix well being sure that all pieces of chicken are coated in salsa. Cook on low for 2 hours.
Remove lid and stir thoroughly then top with mozzarella. Cook for another hour on high with NO lid.
Garnish with cilantro and serve.
