How to get perfectly crispy fried chicken

Summertime eats are now in season. Fried chicken, watermelon and coleslaw are on the menu. If you want to finally tackle the perfect fried chicken, this  recipe from Allrecipes, makes finally mastering it a snap. Ingredients: 
1/4 pound of chicken, cut into pieces
1 cup buttermilk
2 cups all-purpose flour
1 teaspoon paprika
salt and pepper
2 quarts vegetable oil

Place your flour into a plastic storage bag. Add paprika, salt and pepper. Mix well and set aside. 
Pour your buttermilk into a wide, shallow bowl. If you don't have butter milk, combine 1 tablespoon of white vinegar with a cup of regular milk an let it stand for a few minutes.
Next, place your chicken onto parchment paper or a pan. You can choose to leave the skin on or remove it as desired. Dip each piece of chicken into the buttermilk and coat well. Then place it directly into the flour mixture. Seal the bag and shake well to ensure the best coating. Repeat this process with each piece of chicken. 
After you coat each piece of chicken, set it on a cooling rack to let any excess flour fall through. Cover the chicken with a towel and allow your chicken to rest until the batter thickens. Don't skip this step, as this is what helps ensure a perfectly crispy crust. 
Fill a large pot half full with vegetable oil (this could take up to two quarts of oil) and heat to 375 degrees (on a frying thermometer).  Add a few pieces of chicken to the vegetable oil, but allow plenty of space for each piece to fry properly. Cook the chicken for about 10 minutes, or until brown, and then flip and brown the other side. 
Drain your chicken on a rack over a paper towel to remove excess oil. Serve right away. 
Pair this crispy chicken with your favorite side dishes like potatoes, coleslaw or a salad. This dish is perfect for reheating the next day too.
