This jambalaya pasta is an easy one-pot favorite

Jambalaya is amazing enough as a rice dish. The creole platter is popular for a reason, with its assortment of varied ingredients making for a full, super-fun meal. But what if we told you there was a way to make the recipe even more delicious, by substituting plain old rice with tender pasta? That's exactly what popular food bloggers Kevin and Amanda have done, putting a "comfort food" spin on an already comfort food-esque delicacy.
With several kinds of meat, vegetables, and pasta, you'd think this recipe would require an absolutely overwhelming amount of dishes to clean later. But Kevin and Amanda's ingenious concoction only requires a single pot from start to finish. It just does not get any easier! Here's a list of ingredients.

2 tbsp olive oil
1/2 lb. smoked sausage, sliced
1/2 lb. boneless, skinless chicken breasts
2 cups diced onion
2 cups diced bell peppers
Cajun or creole seasoning
3 cloves garlic, minced
2 cups low-sodium chicken broth
1/2 cup heavy cream
8 oz. penne pasta
1 cup Monterey Jack cheese, shredded
1/3 cup thinly sliced scallions
The choice of cajun or creole seasoning is completely up to you, and there's plenty of room for adjustments depending on how spicy you'd like your food. If you want to avoid spices altogether, salt and pepper may suffice. Naturally, the pasta, like with most meals, can be replaced with another kind if you're feeling creative. While Kevin and Amanda's recipe officially calls for penne, the picture above actually features campanelle, which you can use instead if you'd like to go for a more decorative look.
