A simple substitution in this enchilada recipe keeps the carbs and calories low

Enchiladas may not be the first thing you think of when trying to come up with a healthy dinner idea, but this recipe makes a great health-conscious substitution so you can enjoy your enchiladas guilt-free. Instead of wrapping the fillings up in tortillas, this recipe from Joyful Healthy Eats uses scooped-out zucchinis to make enchilada boats! 
Removing the tortillas from the recipe reduces the amount of carbohydrates, fats, and calories that you'll intake with each serving -- zucchini is a super low-carb food, with only 17 calories per 100g. The extra fiber is great for your digestion as well!

-1 tablespoon olive oil
-½ cup diced red onion
-1 lb. lean ground beef
-2 garlic cloves, minced
-1 teaspoon smoked paprika
-1 teaspoon ground cumin
-salt to taste
-3 large zucchinis, sliced in half lengthwise and scooped out to create a "boat"
-1½ cups of old el paso red enchilada sauce
-½ cup shredded cheddar cheese
-¼ cup chopped fresh cilantro
Using zucchini as a base for your enchiladas allows you to still indulge in yummy Mexican food without sacrificing too much. 
Though Joyful Healthy Eats uses ground beef and cheese in this recipe, along with plenty of fresh toppings like avocado and tomatoes, you could even step up your health game by substituting veggies or tofu for the beef!
