Spreading batter this way results in the perfect pancake

Although the pancake is a worldly dish that comes in a variety of consistencies, traditionally in America, the ideal pancake is soft, fluffy and airy. We tend to envision a perfectly round and puffy, pillowy disk, yet getting that result isn't always easy. Despite the simplicity of this breakfast food, it can actually be quite difficult to get right. 
Luckily, this awesome recipe from Nicholas Gavin at Chef Steps, gives you the perfect pancake using a couple easy yet crucial tips. In preparation and cooking, Gavin shares two techniques that elevate your pancake from average to extraordinary.

For Gavin, the secret to getting these pancakes extra fluffy is additional baking powder. You can check out his full recipe for the batter in the video below, but the additional baking powder to an otherwise traditional batter is the secret. 
Secondly, when cooking this extra puffy batter, Chef Gavin suggests dolloping the batter and then swirling the rest off of spoon to achieve the ideal shape and texture (once again see video below for the technique).
Once they've turned a golden brown on one end, flip them and let the other side cook (which shouldn't take long). 
Then, stack yourself up a few and enjoy with some butter and maple syrup or some fresh fruit and ricotta cheese!
