Beef goulash in the slow cooker

Print this recipe
When you're young and naive, the prospect of eating beef goulash isn't exactly enticing. But as you age, and your taste palate matures, you come to realize that goulash is downright delicious. The Kitchen Project says that goulash was eaten primarily by herders and cowboys in Hungary. They would butcher the unfit cattle and use the meat for a hearty stew.
To make your own beef goulash in a slow cooker at home, you'll need the following:
- 2 pounds of beef
- 2 small onions (diced)
- 1 clove crushed garlic
- 2 diced red bell peppers
- can of diced tomatoes
- 2 tbsp tomato paste
- 2 tbsp sweet paprika
- 1/2 cup beef stock
- 1/2 cup water
- dash of salt & pepper

Add all the ingredients into the crock pot and mix things up a bit so the beef is evenly coated. The One Pot Chef suggest cooking this on low for about eight hours. Be sure to check out his YouTube page for a more in-depth look at the recipe.
Serve the goulash over plain rice and enjoy!
