Slow Cooker Sweet Potatoes
Ingredients:
3 - 4 pounds (1.5 - 2 kilograms) sweet potatoes, peeled and diced
2 cups (475 ml) brown sugar
1/4 cup (60 ml) butter, melted
3 tablespoons (45 ml) orange juice
1 tablespoon ground (15 ml) cinnamon
1 teaspoon (5 ml) ground ginger
1 teaspoon (5 ml) ground nutmeg
1 teaspoon (5 ml) ground all-spice
1/2 teaspoon (2 ml) ground cloves
1 teaspoon salt (5 ml)
1 teaspoon vanilla (5 ml)
1 cup (250 ml) mini marshmallows

1. Spray slow cooker with non-stick cooking spray and add diced sweet potatoes. Add the butter, sugar, orange juice, and vanilla. Sprinkles the spices on top and stir to make sure that everything is combined very well.
2. Cover the slow cooker with its lid and cook on High for 4 hours, stirring occasionally, especially during the first half hour. The sweet potato casserole is finished when the sweet potatoes are tender and beginning to brown.
3. Layer the marshmallows on top of the sweet potatoes. Turn heat to Low, place lid back on, and leave until the marshmallows have melted.
