How to make healthy pomegranate chicken

This deliciously fresh chicken dish is packed with a wonderful and surprising combination of flavors.  Slow cooking in a broth of tangy pomegranate juice and ginger, sweet honey, and the herby goodness of cumin and garlic, this chicken will melt in your mouth and leave you wanting more.
It's the perfect chicken dish to pair with something starchy like wild rice and barley, or throw on top of a bed of ice-cold lettuce and veggies. This slow cooker chicken is easy to make, and super versatile.

Ingredients
1 1/2 pounds boneless skinless chicken thighs
1/2 cup pomegranate juice
2 Tbsp honey
1 Tbsp balsamic vinegar
1/4 tsp cumin
1 tsp fresh garlic, minced
1 tsp fresh ginger, minced
1/4 tsp black pepper
1/2 tsp salt
Getting Started
1. In a small bowl combine pomegranate juice, honey, vinegar, cumin, garlic, ginger, black pepper, and salt. 
2. Spray slow cooker with nonstick cooking spray, and place chicken inside the slow cooker. 
3. Pour the pomegranate juice sauce over the chicken, and turn the slow cooker on low for about 6-8 hours. You can also put it on high for about 4 hours. The chickens going to soak up all those tangy sweet juices and be super moist.
4. Slice and serve over rice or salad and enjoy!
Expert Tip
If you're going to serve over a salad, we suggest starting out with a bed of chopped romaine, avocado slices, heirloom tomatoes, and red onion. The cumin is going to bring out the flavor of the avocado, the acidity of the tomatoes will pair beautifully with the pomegranate, and the red onion adds a nice sweet bite.
