The side dish rarely gets the glory at a dinner party. It's about time that's changed. If you're responsible for bringing a tasty side to your next family dinner, you'll want to give this flavorful scalloped potato recipe a try. In total, this recipe should take less than 30 minutes to prep (unless you opt to make the soup required from scratch), and a few hours to cook. This dish will leave your family and friends begging for more.
The recipe is simple, the dinner divine. To get started on this hearty side dish, prep your slow cooker and gather the following ingredients:
3 pounds Yukon Gold potatoes or Eastern potatoes,  thinly sliced
1 large onion, thinly sliced
1 can (10 3/4 ounces) Cheddar Cheese Soup *
1/2 cup milk
1/2 cup Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup shredded Cheddar cheese (about 4 ounces)
*Note: While this recipe calls for canned soup, you can also make your own cheddar cheese soup from scratch. Check out this tasty recipe from My Recipes, if you want to try your hand at a homemade soup.
Follow these easy steps to get started on your next favorite side dish:
1. Coat the inside of your slow cooker with non-stick spray. (You'll want to coat it well for easy cleanup). Place a layer of potatoes followed by a layer of onions inside the slow cooker. Continue layering until you've used all of your potatoes and onion.
2. Combine your soup, milk, Parmesan cheese, salt and pepper in a bowl. Stir well to incorporate all of the ingredients, and then pour this mixture over your potato/onion layers.
3. Cover the dish and cook on high for 4 to 5 hours, or until the potatoes are soft.
4. Once the potatoes are thoroughly cooked, layer with your Cheddar cheese, cover and let cheese melt for about 5 minutes. Serve with you favorite meat and/or salad.
This side dish is a show stopper. The creamy, cheese potatoes are sure to be a hit and taste far better than the ones you get in a box. Try this recipe the next time you get picked to bring a side to the holiday dinner and you may be asked for a repeat performance.
