How to make slow cooker scalloped potatoes

3 pounds Yukon Gold potatoes or Eastern potatoes,  thinly sliced  
1 large onion, thinly sliced 
1 can (10 3/4 ounces) Cheddar Cheese Soup *
1/2 cup milk 
1/2 cup Parmesan cheese 
1/2 teaspoon salt 
1/4 teaspoon ground black pepper 
1 cup shredded Cheddar cheese (about 4 ounces)

Follow these easy steps to get started on your next favorite side dish:
1. Coat the inside of your slow cooker with non-stick spray. (You'll want to coat it well for easy cleanup). Place a layer of potatoes followed by a layer of onions inside the slow cooker. Continue layering until you've used all of your potatoes and onion. 
2. Combine your soup, milk, Parmesan cheese, salt and pepper in a bowl. Stir well to incorporate all of the ingredients, and then pour this mixture over your potato/onion layers. 
3. Cover the dish and cook on high for 4 to 5 hours, or until the potatoes are soft. 
4. Once the potatoes are thoroughly cooked, layer with your Cheddar cheese, cover and let cheese melt for about 5 minutes. Serve with you favorite meat and/or salad.
