Sweet Potato Carrot Soup

2 pounds sweet potatoes, peeled and medium diced
4 carrots, peeled and medium diced
3 tablespoons olive oil
1 onion small diced
6 garlic cloves, minced
1/2 bunch fresh thyme, picked and finely chopped
1 sprig fresh rosemary, picked and finely chopped
3 quarts water
2/3 cup heavy cream
2 teaspoons salt
1/4 teaspoon cracked black pepper
Place all of the ingredients except the heavy cream into a 6-quart slow cooker. Cook on high for 6 hours.
Once cooked through, run the entire slow cooker's contents through a blender or immersion blender until they are turned to a soupy texture. Pour in the heavy cream and blend again until smooth. Serve with freshly ground black pepper and warm crusty bread.
