How to make slow cooker chicken alfredo

Print this recipe
This creamy, cheesy sauce was first created by Alfredo Di Lelio in his mother's Piazza Rosa restaurant in Rome.  A firm favorite with pasta lovers across the world, the recipe is perfect for adaptation to the tastes of your family and friends.  Easy to prepare from the refrigerator and store cupboard, this is a great dish to have in your repertoire.
You can use whatever pasta shape you enjoy the most to serve with this deliciously silky recipe, but long pasta is more suited to serving with Alfredo sauce.  Linguine or fettucini would be good alternatives to the spaghetti.

Cooking spray
4 (4-ounce) skinless, boneless chicken breast halves
1/4 cup water 1 (.7 ounce) package dry Italian-style salad dressing/seasoning mix
1 clove garlic, pressed and chopped
1 (8-ounce) package cream cheese, softened
1 (10.75-ounce) can of condensed cream of chicken soup
1 (4.5-ounce) can of chopped canned mushrooms
1 (8-ounce) package spaghetti
1 tablespoon chopped fresh parsley
Instructions
1.  Spritz the slow cooker with the cooking spray and place the chicken breasts on the bottom of the crock.
2.  Mix the Italian dressing and the water in a small bowl and pour over the chicken, before sprinkling with garlic and cooking on low for 4 hours.
3.  Just before the end of the 4 hours, whisk the cream cheese and soup in a bowl, pour over the chicken and add the mushrooms before cooking on low for a further 1 hour.
4.  Prepare the spaghetti according to the pack instructions until cooked but retaining a little firmness to the bite ('al dente') and drain well before serving with the Chicken Alfredo and a sprinkling of finely chopped parsley.

Ring some changes by switching the chicken soup for mushroom and leaving out the chicken for a vegetarian option.  Alfredo sauce is also excellent with sautéed bacon pieces and peas, which you could add at the same time as the mushrooms.  For a special occasion, try the sauce with scallops and shrimp instead of chicken, and add a squeeze of fresh lemon with  the parsley.  However you serve it, this dish is so delicious that you may well be hoping for leftovers, but I'm Alfredo that you might be disappointed...
