Creamy, mold-ripened Neufchâtel hails from Normandy in France and is similar to Camembert. Ordinary reduced fat cream cheese makes a fine substitute if you can't track it down. If your store doesn't stock ranch dressing then simply mix 1 tsp dried parsley, 3/4 tsp ground black pepper, 1tsp salt, 1/2 tsp garlic powder, 1/4 tsp onion powder and a pinch of dried thyme with one cup of mayonnaise and 3/4 cup of buttermilk. Combine well and keep any you don't use in the refrigerator for up to 5 days.

4 oz Nuefchâtel or reduced fat cream cheese
1 1/4 cups (250ml) reduced fat sour cream
1/2 cup (110 ml) hot sauce/chile sauce/pepper sauce
1/2 cup crumbled blue cheese (reserve a little to sprinkle on top)
1 tsp white wine vinegar
1 tbsp ranch seasoning
3 cups shredded rotisserie chicken
4 stalks celery, washed and chopped
1/2 cup shredded fat-free mozzarella
Pretzel crisps, tortilla chips, or any other crispy snack of your choice!

Instructions:

1. Place all of the ingredients, except for the reserved blue cheese, celery, mozzarella and pretzel chips, into your slow cooker and cook for two hours on medium, stirring occasionally.
2. Transfer to a suitable bowl and stir in the celery and mozzarella, before sprinkling the remaining blue cheese on top of the dip.
You can serve this dip right away, or cool and then chill in the refrigerator until needed. Versatile as well as delicious, you could serve it as a filling for Little Gem/mini Romaine lettuce leaves and arrange on a platter. For a light supper, add a couple of spoonfuls to a baked potato and serve with a green salad.
