Put pork in a slow cooker for a mouth-watering meal you'll want to make again and again

Lean and easy to serve, pork tenderloin is the perfect vehicle for bolder flavors and spices.  If you're cooking for family or friends and want something that's a little different to a regular roast, try this.  Because there's little fat on this cut of pork, tenderloin benefits enormously from long, slow cooking in aromatic juices and stock.
The meat becomes infused with the fabulous flavors, and will be fork-tender by the time you serve it.  This recipe is a forgiving one when it comes to quantities, so don't hesitate to crank up any of your favorite flavors, adding a little more garlic, ginger or red pepper flakes if that's what you love!

1.  Combine the ground ginger, cinnamon, garlic powder and red pepper flakes, then season lightly with salt and pepper and rub all over the pork tenderloin.
2.  Place the meat into your slow cooker then pour the chicken stock around it before cooking on low for 6 to 8 hours.
3.  Meanwhile, gently warm the apple cider vinegar, water, raw honey, coconut aminos, minced ginger and minced garlic in a small saucepan, and season to taste, before bringing to a boil and simmering over a low-medium heat for 4 to 5 minutes.
4.  Just before the slow-cooking time is finished, pre-heat your broiler or grill to high, then remove the pork from the pot, and baste with the garlic and ginger sauce before grilling for 1 - 2 minutes on each side, brushing with the sauce frequently.  Serve sprinkled with the chopped free onions and parsley.

There are so many ways to eat this fabulous dish.  Something relatively neutral, such as a combination of brown and wild rice, or good old mashed potatoes would be perfect, with some broccoli or green beans quickly stir fried in a little sesame oil on the side.  Any leftovers will make an exceptional sandwich when paired up with some peppery salad leaves and a dab of mayonnaise mixed with a little French mustard.
