Add bourbon and chicken in a slow cooker for a meal that'll impress everyone

If you've never been to Bourbon Street in New Orleans, you can certainly try one of the main dishes believed to have originated in its culinary district. Bourbon chicken is the tasty marriage of both sweet and savory flavors. If history is right, then this meal takes one of Kentucky's most recognized beverages and gives it a Chinese twist.
While the ingredient list is long, don't shy away from this one. Your slow cooker heats the sauce and creates a juicy flavorful chicken dish that is worthy of company any day of the week. So ... let's get cooking!

Serves: 4-6
 
Ingredients
·        1/2 teaspoon ginger, powdered
·        1-3 cloves garlic, minced (feel free to adjust to suit your taste)
·        1/2 teaspoon dried red chili flakes
·        1/3 cup (79 ml.) apple juice
·        2 tablespoons honey
·        1/4 cup (57 g.) brown sugar
·        1/4 cup (57 g.) ketchup
·        3 tablespoons apple cider vinegar
·        1/4 cup (59 g.) soy sauce, regular or low sodium
·        1/2 cup (59 g.) bourbon
·        1 teaspoon ground pepper
·        1 teaspoon salt
·        6 boneless, skinless chicken thighs
·        3 tablespoons cornstarch
·        3 tablespoons water
*Optional thinly sliced scallions 
1. Begin by whisking all of the ingredients together (except for the chicken, cornstarch and water) in your slow cooker. Tip: If your family likes things spicy, feel free to adjust the amount of chili flakes.
2. Add the chicken thighs and turn once or twice to ensure they are all evenly coated with the sauce mixture. Cover and cook on high for 3 hours.
3. Remove the chicken thighs from the sauce and dice them into bite-sized pieces. Set aside briefly.
4. Stir together the cornstarch and water mixture, then add it to the slow cooker. Stir thoroughly. This will help the mixture tighten up and form a thicker sauce. Tip: You can also make your slurry using the sauce instead of water. Simply add it to a small dish with the cornstarch, whisk thoroughly, and pour into the slow cooker. 
5. Return the diced chicken to the sauce mixture once more and toss thoroughly. Serve with rice and top with finely sliced scallions.
