A real treat of a recipe; slow cooked pork, with a fabulous herb and garlic rub and the vegetables cooked alongside. Pork, possibly more than any other meat, is just perfect for the long slow cooking process.  It's fat renders the meat beautifully tender and moist, and it's mild flavor is the perfect vehicle for herbs and aromatics.
Cut away some of that fat though, but leave enough on to baste everything with porky deliciousness for a dish that the whole family will love.
Slow-cooked pork with herb and garlic rub
3-lb pork shoulder (or Boston butt), fat lightly trimmed
4 medium potatoes, washed and halved (peeled if desired)
1 large onion, quartered
1 cup baby carrots
2 tablespoons olive oil
4 cloves garlic, minced
1/2 tablespoon salt
1 teaspoon pepper
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried rosemary
1 cup water

1. In a small bowl, mix together olive oil, garlic, salt, pepper, thyme, basil and rosemary. Massage the herb mixture all over the pork shoulder, making sure to get all sides.
2. Lay roast in bottom of a 6-quart slow cooker. Add potatoes, onion, and carrots on and around the roast. Pour in the water. Cover and cook on low for 4.5 hours.
3. Remove the vegetables and place on a serving tray. Remove roast and gently pull apart using two forks, removing any large chunks of fat.
4. Serve with vegetables for dinner. Then use the leftovers for delicious pulled pork sandwiches.
