If you've got a hungry team to feed and need some fresh inspiration, then look no further!  Creamy, bacon and herb sauce with tender chicken, all tossed with perfectly al dente pasta.  Fantastically easy to prepare, and even easier to eat, this delicious recipe will fill your kitchen with the most enticing aromas as you wait for the slow cooker to do its magic!
Feel free to use chicken thighs if you have them, and you could throw in a handful or two of frozen peas towards the end of the cooking time as they always work so well alongside bacon.  This isn't a very 'wet' sauce, so feel free to add a spoonful or two of milk to loosen it up if you prefer.

Chicken and bacon spaghetti
15 minutes
2 hours 40 minutes
2 hours 55 minutes
2 pounds chicken breasts, boneless, skinless, butterflied in half
1 pack bacon, thinly sliced
1½ tablespoon dijon mustard
5 cloves garlic, minced into a paste
8 oz. spaghetti
1/2 cup water
1 jar (24 oz.) marinara sauce
2 tablespoons tomato paste
1 teaspoon salt
Pepper to taste
In a 6-quart slow cooker, add in bacon, water, marinara, and tomato paste. Mix well, making sure that tomato paste is fully incorporated.
Add in spaghetti. Mix with your fingers, making sure each noodle is coated with sauce. Arrange noodles so they are all laying flat and none are sticking up out of the sauce.
Season chicken with salt and pepper. Massage dijon and garlic into chicken with your fingers.
Place on top of pasta in slow cooker. Cook on high for 2 hours and 40 minutes.
Optional: To better cook pasta, temporarily remove chicken and mix spaghetti after 1 hour and 30 minutes. Replace chicken on top. Continue cooking for remaining time.
Remove chicken. Serve with spaghetti.
Top with extra cheese and fresh basil if desired.
Comforting, creamy and able to sort out the hungriest of appetites, this dish only needs a green salad alongside it for a fresh touch.  Pasta dishes are perfect for mid-week meals, and one this good is definitely a keeper!
Note: All slow cookers are a little bit different in temperature and calibration. This recipe was tested in Cooktop Cove's Test Kitchen using this slow cooker, which is available for purchase here.
