A brilliantly flavorsome and complete recipe; this is the perfect dish to fix just as you dash out of the house in the morning. It only takes a few moments to put together, but the long cooking time ensures a rich and deep flavor that is just fabulous to return home to.
If your chops are particularly fatty then cut a little off, but leave some pork fat intact, as the cooking process will render it down and add to that wonderful sauce.

Slow Cooker pork belly

2 pounds pork belly, cut into thick strips lengthwise
3 cups orange juice
⅓ cup (50 grams) brown sugar
5 cloves garlic minced
2 tablespoons apple cider vinegar
2 teaspoons paprika
2 teaspoons fresh thyme finely chopped
1 teaspoon chili flake
1½ teaspoon salt
¼ teaspoon pepper
3 green onions thinly sliced
Place pork belly strips into a 6-quart slow cooker. Place 3 horizontally and then another 3 vertically on top. Repeat with remaining.
In a large bowl, mix together, orange juice, brown sugar, garlic, apple cider vinegar, paprika, thyme, chili flake, salt, pepper, and green onions.
Pour mixture over pork, and then cook on high for 4½ hours.
Serve with sauce and enjoy!
