Carrots and potatoes add a heartiness to this Asian-inspired chicken dish. I recommend using bone-in chicken thighs, but you can substitute boneless chicken thighs.

Slow cooker honey chicken

2 pounds chicken thighs, bone in, skin on
1 pound small red bliss potatoes, cut in half
1 pound baby carrots
2 teaspoons kosher salt
½ cup honey
½ cup soy sauce
2 tablespoons apple cider vinegar
2 tablespoons ketchup
1 tablespoon minced fresh ginger
2 cloves garlic, minced
2 tablespoons sesame oil
1 tablespoon sesame seeds
In a 6-quart slow cooker, arrange potatoes and carrots side by side. Place chicken on top.
In a mixing bowl, combine salt, honey, soy sauce, apple cider vinegar, ketchup, ginger, garlic and sesame oil to make the sauce.
Add sauce to the slow cooker and cover with lid.
Cook on low heat for 5 hours.
Remove chicken, potatoes and carrots.
Pour sauce from the slow cooker over chicken and garnish with sesame seeds.
