How to make crock pot Italian beef sandwiches

This is such a simple recipe, but like so many things born of simplicity, totally brilliant. Beef that is allowed to cook this slowly, alongside some heady and aromatic bedfellows, will repay your patience in spades. By the end of the cooking time, it will be fork-tender and utterly delicious.
You can fix this dish in seconds, before dashing out to work, then return to the finest-smelling kitchen in town.

Slow cooker Italian beef sandwiches
Ingredients
3-4 lb chuck roast
2 envelopes/2 tsp dry Italian dressing seasoning
16 oz jar banana peppers or other large, very mild chiles
1/2 cup (120 ml) water
8 sandwich rolls/sub rolls
16 slices provolone cheese, to serve
Extra banana peppers, to serve
Directions
1. Place the beef, Italian seasoning, banana peppers (save some to serve) and 1/2 cup water into your slow cooker, stir gently then set to cook on low for 8 hours, or on high for 4 hours.
2. At the end of the cooking time, shred the meat with two forks, in the cooking liquid.
Serve in the rolls, topped with extra banana peppers, and some provolone cheese for a nice creamy contrast. Piquant and delicious, these make the greatest lunch ever, and any leftovers will only improve overnight in a refrigerator container. Don't count on those leftovers though…
