Asian Stir-fry and Sausage Casserole

Ingredients:
2 cups basmati rice
4 cups chicken broth or chicken stock
1/2 pound smoked sausage, sliced
2 carrots, thinly sliced
1 red onion, thinly sliced
1 bell pepper, thinly sliced
3 cups roughly chopped broccoli
1-inch piece fresh ginger, minced
2 garlic cloves, minced
1/2 cup soy sauce
1 tablespoon honey
Instructions:
1. Preheat your oven to 400 degrees Fahrenheit. In a well-greased casserole dish, pour in the rice and place the sausage, sliced carrots, onion, bell pepper and broccoli on top.
2. In a large bowl, mix the chicken broth with the ginger, garlic, soy sauce and honey. Stir until well-mixed. Pour the liquid over the casserole. Place in the preheated oven for 35 minutes, or until rice is fully cooked.
Pro tip: For an added punch of flavor, sprinkle some toasted sesame seeds over the top of the dish before placing it in the oven.
