How to make sweet potato 'casserole' in a slow cooker

The holiday season is just around the corner and the table wouldn't be complete without sweet potato casserole. But where are you supposed to find room for it in your oven on the big day, when a turkey takes up most of the space and you still need to find room for stuffing, and all your other side dishes. Let the slow cooker take over and bubble up one of the most delicious sweet potato casseroles you've ever tasted - marshmallows and all!
You can keep the casserole traditional, but oranges and sweet potatoes are one of those culinary matches that was just made to be. Plus the tartness of the orange cuts nicely against the sweetness of the potatoes and marshmallows.

Slow cooker sweet potato casserole

Ingredients
3 - 4 pounds (1.5 - 2 kilograms) sweet potatoes, peeled and diced
2 cups (475 ml) brown sugar
1/4 cup (60 ml) butter, melted
3 tablespoons (45 ml) orange juice
1 tablespoon ground (15 ml) cinnamon
1 teaspoon (5 ml) ground ginger
1 teaspoon (5 ml) ground nutmeg
1 teaspoon (5 ml) ground allspice
1/2 teaspoon (2 ml) ground cloves
1 teaspoon salt (5 ml)
1 teaspoon vanilla (5 ml)
1 cup (250 ml) mini marshmallows
Directions
1. Spray slow cooker with non-stick cooking spray and add diced sweet potatoes. Add the butter, orange juice, and vanilla. Sprinkles the spices on top and stir to make sure that everything is combined very well.
2. Cover the slow cooker with its lid and cook on high for 4 hours, stirring occasionally, especially during the first half hour. The sweet potato casserole is finished when the sweet potatoes are tender and beginning to brown.
3. Layer the marshmallows on top of the sweet potatoes. Turn heat to low, place lid back on, and leave until the marshmallows have melted.
Pro tip: The sweet potatoes in this recipe are left in a small dice, which can give the dish more texture than the traditional mashed variety. If you prefer mashed, you can still make this recipe in the slow cooker! Just place the diced sweet potatoes inside, add 1 cup of water, and cook on Low for about 4 hours, or until the sweet potatoes are tender. Mash, and continue with rest of recipe.
